Easy Gluten-Free Pizza Crust

My boyfriend was hungry last night and I did not feel like cooking, again!

But, because I would rather cook for him than have to run to the local market and buy something genetically modified with added sugar, I mustered up the energy to cook another meal! For the fourth time that day!

Then I threw this pizza together in just a few minutes!

Some coconut flour, eggs, and Italian seasonings into the blender, and then into a warmed pan on the stove!

Waited a few minutes until it was solid, flipped it over and let it cook some more.

I topped it with 1/4 cup sugar-free organic spaghetti sauce, 1/2 cup raw unpasteurized mozzarella cheese, and some Battistoni's "Organic Uncured All-Beef Pepperoni" I found at Whole Foods. It's hard to source pepperoni without added nitrates, artificial colors and synthetic flavors, but I was happy I could for him.

I love to make my boyfriend cleaner versions of his favorite foods.

Not only was it super easy to make, but he raved about it too!! #success

Ingredients
  • 4 eggs pasture-raised
  • 2 tbsp ghee, pasture-raised butter, or coconut oil
  • 1 tbsp coconut flour
  • 1 tbsp arrowroot flour
  • 1/2 tsp granulated garlic
  • 1/4 tsp onion powder
  • 1/4 tsp dried oregano
  • 1/4 tsp dried basil
  • 1/4 tsp dried thyme
  • 1/4 tsp pink Himalayan salt
Servings: 12-inch pizza crust

Instructions
  1. Blend all ingredients, except ghee, butter or coconut oil, in a blender until completely mixed.
  2. Melt 2 tbsp ghee, butter or coconut oil in a 12-inch stainless steel pan on low heat.
  3. Pour batter in pan and cover with a tight-fitting lid. Let cook for 5 minutes, or until golden brown on the bottom and the batter is firm.
  4. Loosen the sides and underneath the pizza, then flip over carefully with a spatula.
  5. Cook for another 2-5 minutes, or until golden brown underneath, with the lid on.
  6. Remove from heat. Top with your favorite spaghetti sauce, raw mozzarella cheese and toppings then broil for 2-3 minutes on low or until the cheese is melted (if using)! Enjoy!
