Roasted Veggies

Some days I just love simplicity.

Roasted veggies. What could be more simple than that?

I make this weekly in my house.

It's not often you find a quick, healthy and nutritious meal that EVERYONE loves. Including the kiddos.

We don't heat olive oil, because we prefer it raw and coconut oil has a higher smoke point so we opt for that in baking and roasting.

I also switch up the vegetables each week depending on what's in season, what's in my fridge, what was organic on sale, what I found at the farmer's market, etc. etc.

So feel free to use any veggies you prefer.

Enjoy!

  • 1 yellow squash sliced

Instructions
  1. Preheat the oven to 350° F.
  2. Chop your preferred veggies. Feel free to use different ones other than listed above. I change my veggies out week to week depending on what's fresh and in season. I like to use a mandolin for thinly sliced onions, carrots, and squash, but a sharp knife will work as well.
  3. Put your veggies in a large bowl and mix thoroughly with coconut oil and spices.
  4. Lay a sheet of parchment paper on a baking sheet.
  5. Spread veggies over the parchment paper in a single layer.
  6. Bake for 30 minutes, or until golden brown, flipping once halfway through.
