Strawberry Spinach Salad

This is one of my all-time favorite salads. 

You would never guess how easy it was to make by the delicious taste.

It's perfect to serve to guests, as a side dish or main entree, and easy to make in advance.

It's absolutely delicious, and because it only takes 2 dishes and 10 minutes of prep, it's a favorite of mine to make.

Ingredients
Base
  • 10 oz spinach fresh
  • 1 qt strawberries fresh
  • 1/4 cup almonds blanched or sprouted, slivered
  • 2 tbsp poppy seeds or chia seeds
Dressing
  • 1/2 cup olive oil extra virgin
  • 1/3 cup raw honey
  • 2 tbsp sweet onion
  • 2 tbsp apple cider vinegar unfiltered
  • 1 tbsp coconut aminos

Instructions
  1. Blend all dressing ingredients together in a high speed blender.
  2. Put dressing in an airtight glass container and refrigerate for at least 30 minutes.
  3. Wash the spinach and cut into bite-size pieces.
  4. Slice the strawberries.
  5. Mix together the spinach, strawberries, almonds, and poppy seeds.
  6. Toss with chilled dressing before serving.
