Hidden Veggie Meatballs

People always ask me how to get their kids to eat more veggies.

I think one of the best ways to get started is to sneak them in. I have a few go-to recipes, like this, where I alternate the vegetables I use each week depending on what’s in my fridge or fresh & available at the farmer’s market. The kids don’t even know what’s in them!

I believe the more vegetables and healthy foods we sneak into our kids, the more they actually begin to crave them and ask for them on their own. That’s what I experienced with both of my children, anyways.

This is a GAPS Intro recipe. GAPS stands for The Gut and Psychology Syndrome Diet designed by Dr. Natasha Campbell-McBride who healed her son’s autism and many of her patients as well. It is a six-stage diet intended for healing the gut. We have seen tremendous results from it with my son Dominic (click here to watch his Before & After video). To this day, we still cook a lot of GAPS Intro-approved meals, things like Chicken Zoodle Soup! Chicken Zoodle Soup is a classic GAPS Intro meal. With zucchini noodles though, no grains! Just nutrient-dense, gut healing foods!

My success with GAPS is what prompted me to create The Gut Healing Guide, which is a more updated/advanced version in my opinion (for example: less inflammatory // common allergen foods are allowed like peanut butter) and it is also an easier to digest (pun intended) guide for parents. Most of the people I have talked to are very overwhelmed by the GAPS book and don’t know how to start or where to begin. So, I break it down with what to do each day, simple-to-follow recipes, meal plans, and shopping lists that I created for myself for my own family on the journey. And now I share it with others here. 

It wasn’t easy switching my son with severe food intolerances, and sensory difficulties, off of a processed foods diet to a lifestyle rich in nutritious whole foods, but it was worth it. Now he eats healthier than anyone I know! It’s awesome.

Hidden Veggie Meatballs

This is the recipe I use to get my VERY PICKY son to eat his vegetables!
Prep Time 5 minutes
Cook Time 15 minutes
Total Time 20 minutes

Equipment

  • Blender
  • Soup Pot

Ingredients
  

  • 1 Cup Brussels Sprouts
  • 1 Zucchini peeled
  • 2 Inches Turmeric Root peeled
  • 2 Cups Cauliflower
  • 1 Lb Organic Ground Turkey
  • 4 Cups Chicken Stock (or bone broth)
  • Coconut oil (for hands)

Instructions
 

  • Blend all veggies except cauliflower until smooth. Add cauliflower, then blend again. Add ground turkey & blend again until pureed. Rub coconut oil on hands to prevent sticking, then roll into desired size meatballs or patties. Next, heat 4 cups chicken stock on medium-low heat until simmering. Add meatballs or patties, stir, and cover with lid. Let cook for 10-15 minutes, and enjoy!
