Some days I just love simplicity.
Roasted veggies. What could be more simple than that?
I make this weekly in my house.
It's not often you find a quick, healthy and nutritious meal that EVERYONE loves. Including the kiddos.
We don't heat olive oil, because we prefer it raw and coconut oil has a higher smoke point so we opt for that in baking and roasting.
I also switch up the vegetables each week depending on what's in season, what's in my fridge, what was organic on sale, what I found at the farmer's market, etc. etc.
So feel free to use any veggies you prefer.
