Hidden Veggie Meatballs

People always ask me how to get their kids to eat more veggies.

I think one of the best ways to get started is to sneak them in. I have a few go-to recipes, like this, where I alternate the vegetables I use each week depending on what’s in my fridge or fresh & available at the farmer’s market. The kids don’t even know what’s in them!

I believe the more vegetables and healthy foods we sneak into our kids, the more they actually begin to crave them and ask for them on their own. That’s what I experienced with both of my children, anyways.

This is a GAPS Intro recipe. GAPS stands for Gut and Psychology Diet designed by Dr. Natasha Campbell-McBride who healed her son’s autism and many of her patients as well. It is a six-stage diet intended for healing the gut. We have seen tremendous results from it with Dominic. To this day, we still cook a lot of Intro meals, things like chicken soup! A classic GAPS Intro meal. With zucchini noodles though, no grains <3

It wasn’t easy switching my son with severe food intolerances, and sensory difficulties, off of a processed foods diet to a lifestyle rich in nutritious whole foods, but it was worth it. Now he eats healthier than anyone I know! It’s awesome.
